Well technically life did not give me tomatoes, my wonderful step-Dad did. My tomatoes have not done well in the neglected state I left my garden in this year. But thankfully my parent's have.
Now on the other hand I planted tomatillos this year, I had never tasted on or grown them. I was at the nursery though and there they were, right next to the jalapenos, 4 plants for $1... could I beat that??
So they came home with me and I planted them, then neglected them, but they gave me some love anyway.
Now I have learned that I love tomatillos, I will cut them up and eat them plain. If you've never had one they have a tomatoy/limey taste that screams, "PUT ME IN MEXICAN FOOD!!!"
So I listened to them, and I made some salsa.
It is easy, it is fresh, it is healthy, it is delicious... perfect!
Here's what you'll need-
3- Medium tomatoes
6- Medium tomatillos
1-2 jalapenos (this is totally a matter of preference, mine aren't very hot, add or subtract for your preferred level of spiciness)
1/2- Medium Onion
1-tsp Sea Salt
2-tsp- minced garlic
2-tsp Lime juice
Roughly chop your tomatoes, tomatillos, onion and jalapenos. Next throw them in a food processor and pulse until roughly chopped. If you don't have a food processor just finely chop all your veggies. Add the sea salt, garlic and lime juice, and mix it up!
Dip in a chip and enjoy!!
